Summer Gardening

After reading my friend Chris’ recent blog post on his breakfast frittata I’d been craving one. So this morning I decided to get rid of my carton of Southwestern Egg Beaters and some vegetables that were nearing their end and made an Egg Beater Frittata.

I first preset the broiler. While it was heating up, I sautéed onions, red bell peppers, spinach, and chopped tomatoes. Then I simply poured over a carton of Egg Beaters, added some cheddar cheese and mozzarella cheese, and covered the pan for about 10 min. After the “eggs” were almost set, I stuck them in the broiler for about 2 minutes.Frittatas are a great way to get your share of protein and to get rid of vegetables that you know you can’t finish before they go bad. They are so versatile and easy to make too.

Today consisted of a lot of catching up and busy work. I had to make up an exam and take care of study abroad paperwork in between classes. I can’t believe there are less than 2 weeks left this semester! For lunch I stopped at this new café in Columbia called Jasmine’s Café. It has sandwiches and personal pizzas as well as a self serve salad bar and yogurt bar. I made myself a small side salad topped with a little bit of pasta salad and also made a yogurt parfait filled with granola, nuts, berries, and kiwi. It was a healthy, refreshing, yet filling lunch. Jasmine’s also has a counter filled with AMAZING looking desserts which I will probably be going back for sometime in the future.

This afternoon we planted our summer garden at the Outdoor Recreation office. Every season we plant vegetables and herbs to either be taken on adventure trips or for staffers to bring home to eat. I think it’s pretty cool that we are able to have our very own organic garden in the middle of campus. Today we planted broccoli rabe, potatoes, cucumbers, tomatoes, strawberries, butternut squash, and a few different types of peppers. We also made additions to our herb garden with cilantro and basil.

I can’t wait to have my own house so I can plant a vegetable garden of my own. It’s a great way to enrich the soil, save food costs, and reduce your carbon footprint. And it’s fun too! Gardening serves as a stress reliever for a lot of people. Must be all that Vitamin C you get from being in the sun Smile You can also add serious flavor to any dish by adding a variety of herbs. I brought some oregano home with me to transplant into a window box. It’s one of my favorite herbs, and I will definitely be putting it to use!
