I’ve been glued to the TV since 8 a.m. watching coverage and recaps of the royal wedding and I have noo shame. I waited in anticipation for hours and hours for that kiss, and it finally came!
We all know how much the English love their tea, so I created a chai tea latte inspired muffin, for only 126 calories each.
Makes 12
Ingredients
- 1/4 cup margarine, softened
- 1/2 cup applesauce
- 1/2 cup chai concentrate
- 1/2 cup soy milk
- 1 1/2 cup whole wheat flour
- 1/2 cup all purpose flour
- 3/4 cup stevia sweetener
- 1 Tbsp baking powder
- 1/2 tsp ground cinnamon
Directions
1. Preheat oven to 350 degrees.
2. Combine margarine, applesauce, chai concentrate, and soy milk in a medium bowl. In a separate bowl, combine remaining dry ingredients.
3. Combine wet and dry ingredients and divide batter among 12 muffin cups.
4. Bake for 31 minutes.
Oh it looks good! Wanna have a cup like that.
