Simple Homemade Salsa

Today we had a fun little event at Outdoor Recreation’s challenge course. We planted vegetables and herbs in pots and swung from the top of the wooden course, which was a bit terrifying but so much fun. I undoubtedly screamed more than anyone else, and there is a video to prove it.


For today’s workout I ran two miles before going to a 60 minute pilates class. I seriously need to step it up with my workouts this week after all of the liquid calories I consumed this past weekend. Oooopsies. Hey, you only turn 21 once! I came home and made a fresh, simple dinner of brown rice seasoned with ground cumin and a fiesta lime seasoning we have in the pantry, topped with homemade salsa and avocado slices.


Simple Homemade Salsa


    • 1 cup chopped tomatoes
    • 1/2 cup chopped onions
    • 1/4 cup fresh cilantro
    • 1/4 cup roasted bell peppers
    • 1 Tbsp diced jalapenos
    • 1/2 Tbsp minced garlic
    • 1 tsp salt

Just put all ingredients in a blended or food processor and pulse until smooth.
