Makes 3-4 Servings
- 1 cup bulghur wheat
- 1 1/2 cups vegetable broth
- 1/2 cup fresh chopped parsley
- 1 cup chopped tomatoes
- 1/2 cup chopped cucumber
- 1/3 cup pitted kalamata olives
- 1 Tbsp lemon juice
- 1 tsp minced garlic
- 1/4 tsp ground cumin
- 2 tsp olive oil
Bring vegetable broth to a boil then pour over the bulgur wheat in a glass container. Add minced garlic, lemon juice, and cumin. Cover and let sit for 20 min or until all the liquid is absorbed.
After the broth has been completely absorbed, add the olive oil, chopped parsley, tomatoes, and cucumber.
Enjoy over a bed of spinach with feta cheese and Italian dressing.
