Cinnamon Carrot Muffins

I found this recipe in the latest Whole Living magazine, but made a few tweaks.


At only about 110 calories each, these make a delicious & healthy snack or quick breakfast.

Makes 12


  •  3/4 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 2 Tbsp wheat germ
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 2 Tbsp vegetable oil
  • 3 Tbsp applesauce
  • 1/3 cup soy milk
  • 1/4 cup stevia sweetener (such as Truvia)
  • 1/2 cup light brown sugar
  • 1 cup grated carrots


Preheat oven to 350 degrees. Line muffin tins with paper cups. Whisk together all dry ingredients in one bowl. In another bowl combine applesauce, oil, soy milk, and eggs. Stir together both mixtures and then add in the chopped, grated carrots.


Spoon batter into paper cups and bake for 22 minutes.


Let cool for 10 min and enjoy!

    Thanks so much! I loved this recipe but couldn’t find where I put the magazine! Thanks bunches for actaully writing about it! These muffins are one of my favorites:)
